Who doesn’t love Sundays? Finally time to sleep in, time to ignore them pants & bras, time to recover! Not to mention: Time to really cook things up in the kitchen without having to hustle out the door any second. One of my all-time favorite Sunday treats has to be scrambled eggs. So simple, so delicious. Hence – today I thought I’d share with you my personal recipe (again – not even worthy of the name “recipe” as it’s so easy to make):
What you’ll need (1 serving):
- 2 mid-sized eggs
- ¼ of a small onion
- 1 tablespoon of milk
- 1 teaspoon extra virgin olive oil (or any oil of choice)
- Salt, pepper, fresh chives
- A slice of whole wheat bread
- Optional: Cheese as a topping
- Optional: Cocktail tomatoes as a side
Start off by dicing the onion and chopping the fresh chives. Heat up a small pan and add the oil as well as the onion. Reach for a bowl and whisk up eggs, milk, salt, pepper and a dash of the cut up chives. Wait for the chopped onion to change shape & color (it should be a little brown, yet far from crispy) and toss everything in. Wait 20-30 seconds and start stirring until you reach the desired texture of scrambled eggs. Drizzle the rest of the chives on top. Turn off your stove and place the pan on a wooden cut board (creating that somewhat rustic feel, plus saving you a bit of dish washing time) and add your sides.
