About time for my first food related post! Over the past months I’ve been challenging myself to a healthier lifestyle, that is, trying “clean” recipes here and there. Paleo pancakes happen to be very popular amongst fitspo people, especially on Instagram. I believe the original intention of cooking “paleo style” is only to use 2 ingredients, however this version is a bit different. So, without further ado, here goes my favorite recipe for yummy breakfast pancakes:
What you’ll need: 1 ripe banana, 1 egg, 2 tablespoons whole wheat flour, 1 tablespoon honey, 1/2 cup skim milk, 3-4 strawberries, 1/2 cup greek yoghurt, optional: fresh (or frozen) blueberries, optional: 1 tablespoon olive oil
Recipe: Whisk flour, egg, honey and milk together. Mash up banana with a fork and add to the mixture. Cook pancakes in a pan (optionally with olive oil). For the topping, mix strawberries and greek yoghurt in a smoothie blender. Add creme to pancakes and serve with fresh blueberries.
